Intro

Esencia Foods is looking for a Lead Fermentation Scientist / Mycologist and Site Lead to pioneer the development of their mycelium-based technology platform. The role involves conducting research and development, hiring and managing a team, finding a commercial/lab space, and supporting strategic decisions. The ideal candidate should have a background in Mycology, Biotechnology, or a related field, as well as experience working with fungal mycology and strong aseptic conditions. The company values independence, willingness to learn, and a proactive attitude. Experience in the Food Industry and Bioprocess Development is a plus. The position offers the opportunity to work directly with the founders, contribute to groundbreaking technology, and make a true impact on the environment and food system.

Aufgaben

  • Discovery and characterization of new fungal strains with the potential to become alt-seafood
  • Creating and developing multiple approaches to achieve novel mycelium textures
  • Design and execution of experiments to optimize the substrate, inoculation, and mycelial growth
  • Develop methodologies to characterize mycelium biochemical, material, and nutritional properties
  • Developing and executing RnD strategy plan as well as supporting strategic decisions
  • Working closely with food scientists, fermentation and bioprocess engineers to translate lab discoveries into scalable technologies

Anforderungen

  • Degrees are great, relevant experience is better. This can come in the form of an MSc. +3 years experience or Ph.D. +1 year experience in Mycology, Biotechnology, or any relevant experience
  • Experience in working with strong aseptic conditions required for fungal mycology
  • A track record of willingness to learn, adapt, get stuff done, and be proactive
  • Independence and strong sense of ownership for tasks
  • Willingness to travel for about one to two times for about 3 days every month
  • Experiences in the Food Industry and Bioprocess Development
